The Cuts, and What Each Is For

Every part of the bird wants a different method. Matching them is most of the job.

Almost every mistake made with chicken comes from treating the whole bird as one material. It is two, and they want opposite things.

The divide that explains everything

Muscle protein begins to squeeze out its water at around 65 °C and is dry by 75 °C. Collagen — the connective tissue that holds hard-working muscle together — is tough and rubbery until roughly 70 °C, and only converts into soft gelatin if it is held above that for a sustained period.

So the two requirements are in direct conflict. Get a cut to 75 °C and hold it there and you will have destroyed lean muscle but transformed collagen. Stop at 65 °C and you preserve the muscle but leave collagen unconverted.

Which is correct depends entirely on how much collagen the cut has, and that depends on how hard the bird worked that muscle.

Breast is a flight muscle in a bird that does not fly. It has almost no connective tissue, so there is nothing to gain from cooking it past the point the muscle dries out.

Why roasting a whole bird is a compromise

A whole roast chicken asks you to bring breast to 65 °C and thigh to 75 °C at the same moment, using one oven. It cannot be done perfectly, and every technique in whole-bird roasting is an attempt to close the gap:

  • Trussing holds the legs against the body, slowing the thighs slightly so the gap narrows.
  • Starting breast-down shields the breast for the first stretch and lets the legs get ahead.
  • Spatchcocking exposes the thighs to more direct heat than the breast, which is why a flattened bird comes out more evenly cooked than a whole one.
  • Jointing abandons the compromise entirely and cooks each group on its own terms. It is the only complete solution.

In practice, roasting to 72 °C in the thigh and accepting that the breast will land around 68 °C is the usual settlement. It costs the breast a little and it is what almost every roast chicken recipe quietly does.
